Mark Lloyd, a celebrity chef and TV presenter, is also a passionate champion of foraging, of harvesting fresh, flavoursome ingredients and improvising delicious recipes from whatever nature's bountiful larder yields on a particular day. In autumn, he collects sloes to flavour gin, rosehips for syrup and jellies, chestnuts, beech nuts and a variety of edible fungi that are delicious in risottos, pastas and stews. Taste lies at the heart of Mark's approach, coupled with an ability to think fast on his feet. 'When you rely on wild foods, you have to be very flexible and willing to interchange ingredients in recipes,’ he says. Many of his recipes are based on the maxim 'if it grows together, it'll go well together' — for example, pork and apples.
